Bits of Knowledge About the Naming of Sake
Junmai: Literally, “Pure Rice”. Only rice is used in its production.
Ginjō: Special brew from rice polished to 60% or less of its original weight.
Generally, the lower the percentage, the fruitier and the higher the quality of sake.
Dai-ginjō: Very Special brew from rice polished to 50% or less.
